Shaggy Mane Turnover

Recipe by Steve Peek: AMC Collection, Cooking with the Asheville Mushroom Club, p. 3

  • 8 oz. shaggy manes, cleaned and sliced
  • 2 - 3 small shallots, chopped
  • butter
  • salt and pepper to taste
  • prepared pie dough

Saute mushrooms and shallots in butter until most of the liquid evaporates, then add salt and pepper to taste.  Cut the pie dough into 2 to 3 inch circles.  Spoon a small amount of the mushroom mixture onto the dough.  Fold in half and carefully seal the edges.  Place on a cookie sheet and bake at 350 until lightly browned.
